Capestang: between sea and mountain.

The Domaine is located at Capestang, a village bordering the Canal du Midi in the South of France, in Languedoc, a unique region where the sun always shines.


Christine and Francois GIMIÉ has enthusiastically decided to perpetuate and give a second life to the family estate. Over 25 hectares of vineyards, the southern grape varieties (Grenache, Syrah, Cinsault, Mourvèdre for the red wines and Vermentino, Roussanne and Viognier for the white ones) combine without complex the traditional grape varieties (Cabernet, Merlot and Chardonnay).


The improvement of wine-making practices, control of yields and work in respect of the soil may summarize the quality approach in which our Domaine is committed, thus perpetuating the noble tradition of "wine-grower work".

This is with passion that Francois GIMIÉ, oenologist, has decided to bring his expertise to his wines.


In constant quest for quality and creativity, he develops southern wines of grape varieties and beautiful blend, fruity, elegant, supple and warm.


Matured grape harvest, custom-made winemaking and aging in barrels are the key to the transformation of the fruit into perfectly balanced sunny wines.

From the threshold of the cellar shaded by a centenary linden, François warmly welcomes you to make you discover, taste and love his wines.


Lovers of old stones will be able to appreciate, additionally to the vestiges of the mill, marine fossils and other archaeological discoveries made on the Domaine.

Our Wines

Wines from the Domaine Moulin Gimié are available in three colours. Wonderful illustration of the vineyard tradition suited to the expectations of modern consumers. Our range includes:


Contemporary wines, charming and gourmand. Fruity and sunny, they must be drunk in their youth for an immediate pleasure.


Standout and refined wines both complex and with a good density. They accompany the flavours of the South or elsewhere, they can also be matured over 4 or 5 years.

Animations

We offer you every week from June to the end of August a "Balade Vigneronne".

Depending on your wishes, you will differently find out Capestang: from the surrounding hills you will have a stunning view, with François you will tread through the vineyard the ancient seabed, you could observe the walls laden with history of the Vieux Moulin and finally tasting the Domaine's wines. Lovers of old stones will be able to admire our collection of fossils "left by the sea 40 million years ago".

Outside the summer period, the "Balades Vigneronnes" are available upon request.
